Ropewalk, the renowned arrack-specialty bar nestled within the historic Galle Fort Hotel, is delighted to announce an exciting collaboration with HOSA, Goa. HOSA, an establishment by EHV International, the creative force behind Indian Accent, Comorin, and Koloman, emerged in Siolim, Goa, offering a fresh interpretation of South Indian cuisine. This partnership marks HOSA's premiere at an international pop-up event, scheduled to enthral guests on March 15th and 16th, 2024, blending the vibrant flavours of South India with the warm hospitality of Sri Lanka.
Meaning 'new' in Kannada, HOSA aptly reflects its Brand Chef, Suresh DC's Bengaluru origins. Chef Suresh's culinary journey across Southern India inspired him to craft a menu that ingeniously blends authenticity with contemporary presentation.
At Ropewalk's exclusive pop-up, guests will embark on a gastronomic voyage curated by Chef Suresh, featuring signature dishes such as Almond 65, Trumpet Mushroom Varuval, Curry Leaf Cured Snapper, and Mutton Pepper Roast. These delicacies pay homage to South India's rich culinary heritage, accompanied by unique offerings like Wild Mushroom Sukka and Mangalorean Chattambade. To conclude, guests will savour refreshing coconut and jasmine-infused desserts, elevating their culinary experience.
Amrit Rajaratnam, the visionary founder of Ropewalk and Managing Director of Maitland and Knox Heritage Hotels, expresses anticipation for this ground-breaking collaboration, emphasizing the importance of cross-cultural culinary exchanges in fostering creativity.
Chef Suresh DC of HOSA echoes this sentiment, eagerly anticipating the opportunity to introduce Sri Lankan diners to the diverse flavours of Southern India. In addition to the culinary delights, Varun Sharma, Head of Bars at EHV International, presents an enticing cocktail menu harmonizing with HOSA's cuisine. Guests can indulge in creations like Gun Fizz Powder and Jungle Babbler, enhancing their dining experience with tropical-inspired libations.
Furthermore, attendees can participate in a mixology masterclass led by Varun Sharma, unveiling the art of crafting cocktails using local Sri Lankan spirits and Indian ingredients on March 16th. Varun Sharma underscores the excitement surrounding this collaboration, highlighting the seamless integration of food and beverage offerings.
This partnership between Ropewalk and HOSA underscores the transformative power of gastronomy in bridging cultural divides and nurturing creativity.
